- Preheat your oven to 400°F (200°C).
- Slice the zucchini in half lengthwise and scoop out the insides, then arrange in a greased baking dish.
- In a medium skillet, cook the ground chicken over medium heat until no longer pink, about 5–7 minutes.
- Stir in the buffalo wing sauce and ranch seasoning until well combined.
- Generously spoon the buffalo chicken mixture into each zucchini boat, then sprinkle cheese on top.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 5 minutes until cheese is bubbly and golden.
- Let cool slightly, then serve garnished with ranch dressing and green onions if desired.
