  • 9x13 metal baking pan

Method

Preparation Steps
  1. Prepare the Dough: Follow the instructions for making the focaccia pizza dough, ensuring it rises for about an hour until doubled in size.
  2. Preheat the Oven: Preheat your oven to 425°F (220°C) and grease the baking pan with olive oil.
  3. Shape the Dough: After the dough has risen, punch it down and transfer it to the baking pan. Stretch it evenly and let it rise again for 20 to 30 minutes.
  4. Cook the Bacon: In a skillet, cook the bacon until crisp, about 8-10 minutes. Drain on paper towels and chop into pieces.
  5. Make Garlic Oil: Combine olive oil and minced garlic in a saucepan over low heat for 3-4 minutes until fragrant.
  6. Mix the Ricotta: In a bowl, mix ricotta cheese with basil, kosher salt, and black pepper until creamy.
  7. Prepare the Dough for Toppings: Create dimples in the dough's surface and brush it with warm garlic oil.
  8. Add the Cheeses and Toppings: Sprinkle the three cheeses, then add the bacon and dollop with the ricotta mixture. Finish with parmesan.
  9. Bake the Pizza: Bake in the oven for 10 minutes, rotate, then bake for another 12-15 minutes at 375°F (190°C) until golden brown.
  10. Finish with Toppings: Sprinkle remaining parmesan, drizzle with hot honey, and add red pepper flakes to taste.
  11. Slice and Serve: Let cool for a few minutes, slice into 8 pieces, and serve warm.
