Step-by-Step Instructions
  1. Rinse sushi rice under cold water until the water runs clear. Cook according to package instructions (about 15-20 minutes). Transfer to bowl and mix in rice vinegar, sugar, and salt. Let cool for 10 minutes.
  2. In a bowl, combine shrimp with sriracha and mayo until coated. Allow marination for 10 minutes.
  3. Place stacking mold on a plate, add sushi rice to the bottom and press down gently. Layer the spicy shrimp mixture on top.
  4. Layer thin slices of avocado and cucumber on top of shrimp, then repeat until mold is full, finishing with rice.
  5. Lift the mold to reveal stacked layers, showcasing shrimp, avocado, and cucumber.
  6. Sprinkle nori strips on top and serve immediately with soy sauce or sriracha on the side.
