- Rinse sushi rice under cold water until the water runs clear. Cook according to package instructions (about 15-20 minutes). Transfer to bowl and mix in rice vinegar, sugar, and salt. Let cool for 10 minutes.
- In a bowl, combine shrimp with sriracha and mayo until coated. Allow marination for 10 minutes.
- Place stacking mold on a plate, add sushi rice to the bottom and press down gently. Layer the spicy shrimp mixture on top.
- Layer thin slices of avocado and cucumber on top of shrimp, then repeat until mold is full, finishing with rice.
- Lift the mold to reveal stacked layers, showcasing shrimp, avocado, and cucumber.
- Sprinkle nori strips on top and serve immediately with soy sauce or sriracha on the side.
