  • 12 sheets Lasagna Noodles no-boil noodles for convenience
For the Cheese Mixture

  • 1 large Eggs omit for vegan version
For the Vegetables
  • 1 tbsp Olive Oil can substitute with avocado oil
  • 1 medium Onion or shallots/leeks for milder taste
  • 2 cloves Garlic preferably fresh, can use garlic powder
  • 5 oz Fresh Spinach can be replaced with kale or Swiss chard
For the Sauce and Toppings
  • 24 oz Marinara Sauce store-bought or homemade
  • 2 cups Mozzarella Cheese try provolone or gouda as alternatives
  • to taste Salt
  • to taste Pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine ricotta cheese, Parmesan, eggs, salt, and pepper until smooth and creamy.
  3. Heat a skillet over medium heat and add olive oil. Sauté chopped onions and minced garlic for 3-4 minutes until translucent.
  4. Stir in fresh spinach and sauté for 2-3 minutes until wilted. Remove from heat and cool slightly.
  5. Lay out lasagna noodles, spread ricotta mixture on each noodle, then layer sautéed spinach over the ricotta. Roll them tightly.
  6. In a greased baking dish, stand rolled noodles upright and closely together.
  7. Pour marinara sauce over the noodles, then sprinkle with mozzarella cheese.
  8. Cover with aluminum foil and bake for 25 minutes. Remove foil and continue baking for 10 more minutes until cheese is bubbly and golden.
  9. Let lasagna rest for 10 minutes before slicing to serve.
