- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine ricotta cheese, Parmesan, eggs, salt, and pepper until smooth and creamy.
- Heat a skillet over medium heat and add olive oil. Sauté chopped onions and minced garlic for 3-4 minutes until translucent.
- Stir in fresh spinach and sauté for 2-3 minutes until wilted. Remove from heat and cool slightly.
- Lay out lasagna noodles, spread ricotta mixture on each noodle, then layer sautéed spinach over the ricotta. Roll them tightly.
- In a greased baking dish, stand rolled noodles upright and closely together.
- Pour marinara sauce over the noodles, then sprinkle with mozzarella cheese.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and continue baking for 10 more minutes until cheese is bubbly and golden.
