  • 1 pound Sirloin Steak Can substitute with flank steak or chicken.
  • 2 tablespoons Olive Oil Avocado oil is a good alternative.
  • 1 tablespoon Chili Powder Use paprika for a milder taste.
  • 1 teaspoon Garlic Powder Substitute with fresh minced garlic if desired.

For the Rice Mixture
  • 2 cups Cooked White Rice Brown rice or cauliflower rice can be used as substitutes.
  • 1 can Diced Tomatoes Drained; canned varieties are great year-round!
  • 1 can Canned Black Beans Rinsed and drained.
  • 1 cup Frozen Corn Fresh corn is delightful when in season.
  • 1 medium Diced Bell Pepper Any color works; add jalapeño for heat.
  • 1 medium Diced Red Onion Green onions can be used for a milder flavor.
For the Creamy Sauce
  • 1 cup Queso Blanco Cheese Sauce A lighter cheese sauce or yogurt alternatively can be used.
  • 1/4 cup Fresh Cilantro Optional garnish.

Cooking Steps
  1. Heat oil in a large skillet over medium-high heat until shimmering.
  2. Season sirloin steak with chili powder, garlic powder, salt, and pepper, then sear in the skillet for 4-5 minutes on each side.
  3. While the steak rests, mix cooked rice, diced tomatoes, black beans, corn, and bell pepper in a large bowl.
  4. Stir in queso blanco cheese sauce until evenly combined.
  5. Slice the rested steak and fold it into the rice mixture.
  6. Optionally garnish with cilantro and serve hot.
