Preheat your oven to 350°F (175°C) and lightly grease a baking dish (8x8 inches works well) with cooking spray or oil.
In a large mixing bowl, combine the rolled oats, protein powder, baking powder, cinnamon, and salt. Stir until well mixed.
In another bowl, whisk together the almond milk, maple syrup, and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients and mix until everything is well incorporated. If using, fold in the mini chocolate chips.
Transfer the mixture to the prepared baking dish and spread it evenly. If desired, sprinkle the top with additional chocolate chips and sprinkles.
Bake in the preheated oven for 25-30 minutes, or until the edges are golden and the center is set.
Allow to cool for a few minutes before slicing into squares. Serve warm or at room temperature.
