  • 3 medium ripe peaches sliced into wedges
  • 1 cup fresh raspberries well-rinsed
  • 1 cup fresh blackberries plump and fresh
For the Dressing
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon honey or agave for vegan option
  • 1 teaspoon lemon zest finely grated
For Garnish
  • 2 tablespoons fresh mint chopped
  • 1 pinch sea salt optional

Preparation Steps
  1. Wash and dry the raspberries and blackberries. Slice the peaches in half, remove the pit, and cut into thin wedges, approximately ¼ inch thick. Place all fruit in a large mixing bowl.
  2. Add the rinsed raspberries and blackberries to the bowl with the sliced peaches. Gently toss using a spatula, being careful not to crush the berries.
  3. In a small mixing bowl, combine lemon juice, honey, and lemon zest. Whisk until smooth and the honey is dissolved.
  4. Drizzle the dressing over the fruit mixture and gently toss to ensure even coating without mashing the berries.
  5. Sprinkle the chopped mint and a pinch of sea salt over the salad. Gently fold the mint in to combine.
  6. Serve immediately or refrigerate for 10-15 minutes before serving for optimal flavor blending. Present in a beautiful bowl.
