Preparation Steps
- Wash and dry the raspberries and blackberries. Slice the peaches in half, remove the pit, and cut into thin wedges, approximately ¼ inch thick. Place all fruit in a large mixing bowl.
- Add the rinsed raspberries and blackberries to the bowl with the sliced peaches. Gently toss using a spatula, being careful not to crush the berries.
- In a small mixing bowl, combine lemon juice, honey, and lemon zest. Whisk until smooth and the honey is dissolved.
- Drizzle the dressing over the fruit mixture and gently toss to ensure even coating without mashing the berries.
- Sprinkle the chopped mint and a pinch of sea salt over the salad. Gently fold the mint in to combine.
- Serve immediately or refrigerate for 10-15 minutes before serving for optimal flavor blending. Present in a beautiful bowl.
