  1. In a large mixing bowl or stand mixer, combine 1 cup of softened butter and 1 tablespoon of espresso powder. Beat on medium speed for about 1 minute until the mixture is creamy and well blended.
  2. Add 1 cup of brown sugar and ¼ cup of white sugar to the bowl. Cream the mixture on medium speed for an additional 2 minutes until it becomes light and fluffy.
  3. Next, crack in 1 large egg and mix on low speed for about 30 seconds, just until everything is combined.
