  • 1 tsp fish sauce Optional; use sparingly.
  • 0.5 lime juice Provides acidity; can be omitted.
For Cooking
  • 2 tbsp oil Any neutral oil works.

Step-by-Step Instructions
  1. Begin by cutting the chicken into bite-sized pieces and toss it with cornstarch, salt, and pepper. Set aside.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Cook the chicken pieces for about 4–5 minutes until golden brown. Remove from skillet.
  3. In the same skillet, add another tablespoon of oil. Sauté the minced garlic and grated ginger for about 1 minute until fragrant.
  4. Combine Thai sweet chili sauce, soy sauce, honey, and Sriracha in a bowl. Pour over the chicken in the skillet and stir to coat. Simmer for 3–4 minutes until thickened.
  5. Remove from heat, squeeze lime juice over the dish, garnish with cilantro, green onions, and sesame seeds.
  6. Serve hot over jasmine rice or rice noodles with a side of slaw.
