- Begin by cutting the chicken into bite-sized pieces and toss it with cornstarch, salt, and pepper. Set aside.
- Heat 1 tablespoon of oil in a large skillet over medium-high heat. Cook the chicken pieces for about 4–5 minutes until golden brown. Remove from skillet.
- In the same skillet, add another tablespoon of oil. Sauté the minced garlic and grated ginger for about 1 minute until fragrant.
- Combine Thai sweet chili sauce, soy sauce, honey, and Sriracha in a bowl. Pour over the chicken in the skillet and stir to coat. Simmer for 3–4 minutes until thickened.
- Remove from heat, squeeze lime juice over the dish, garnish with cilantro, green onions, and sesame seeds.
- Serve hot over jasmine rice or rice noodles with a side of slaw.
