Method
 

Step-by-Step Instructions
  1. In a medium bowl, mix together peach preserves, minced garlic, olive oil, soy sauce, Dijon mustard, cayenne pepper, and salt and pepper until fully combined. Reserve a small amount of this peach glaze if grilling peaches alongside chicken.
  2. Trim excess fat from the chicken pieces and pat dry. Rub with olive oil and season generously with salt and pepper.
  3. Preheat grill for two-zone cooking at around 400°F (204°C).
  4. Place chicken skin-side down on hot grill, cooking for 4 to 5 minutes until golden and crispy. Flip and brush with peach glaze, covering grill to cook for another 4 minutes.
  5. Transfer glazed chicken to indirect heat, baste with peach glaze, and cook for 10 to 15 minutes until internal temperature reaches 165°F (75°C).
  6. If using peaches, slice in half, brush with reserved glaze, and grill cut-side down for 2 minutes. Flip and brush with glaze, grilling for another 3 minutes until soft.
  7. Remove chicken and peaches from grill and let rest for 5 to 10 minutes before serving.
