Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) while you prepare your baking dish.
  2. Grab an 8-inch square baking dish and line it with parchment paper, lightly greasing it with coconut oil.
  3. In a large mixing bowl, combine rolled oats, flour, light brown sugar, chopped almonds, baking soda, and salt. Mix thoroughly.
  4. Pour melted coconut oil over the oat mixture, stirring until evenly coated.
  5. In another bowl, mix the pitted and chopped Northwest cherries with lemon juice, maple syrup, and cornstarch until well combined.
  6. Set aside 1 cup of the oat mixture for the topping, then press the remaining mixture firmly into the bottom of your prepared baking dish.
  7. Spread the cherry filling evenly over the pressed oat base, then crumble the reserved oat mixture on top.
  8. Place the assembled bars in the preheated oven and bake for 30 minutes or until golden brown.
  9. Let the bars cool completely in the pan before slicing into squares.
