  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with aluminum foil and a wire rack on top.
  2. Mix olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper in a bowl to create a spice paste.
  3. Rub the spice paste generously over and underneath the skin of the chicken thighs.
  4. Arrange the seasoned chicken thighs skin-side up on the wire rack and roast for about 30 minutes.
  5. In a saucepan, combine sweet chili sauce, soy sauce, rice vinegar, honey, and ginger. Heat over medium for about 5 minutes.
