Cooking Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced yellow onion and bell pepper, sautéing for 3-4 minutes until they become soft and fragrant.
  2. Add 1 pound of ground beef into the skillet, breaking it apart with a spoon. Cook for about 5-7 minutes, until the beef is fully browned and no longer pink.
  3. Sprinkle in 2 tablespoons of taco seasoning and pour 1/4 cup of water over the beef mixture. Stir well to combine, allowing the seasoning to coat the beef evenly.
  4. Mix in 16 ounces of frozen cauliflower rice and one can of diced tomatoes with green chilies. Bring the mixture to a simmer over medium heat, stirring occasionally. Cook for about 10 minutes, or until the cauliflower is heated through.
  5. Reduce the heat to low and sprinkle 1 cup of shredded cheddar cheese evenly over the top. Cover the skillet and let it cook for 2-3 minutes, until the cheese is melted and bubbly.
  6. Remove the skillet from heat, and it's ready to serve! Spoon the cheesy Taco Ground Beef & Cauliflower Rice onto plates, optionally topping with creamy avocado slices, dollops of sour cream, or spicy jalapeños for an extra kick.
