Cooking Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced yellow onion and bell pepper, sautéing for 3-4 minutes until they become soft and fragrant.
- Add 1 pound of ground beef into the skillet, breaking it apart with a spoon. Cook for about 5-7 minutes, until the beef is fully browned and no longer pink.
- Sprinkle in 2 tablespoons of taco seasoning and pour 1/4 cup of water over the beef mixture. Stir well to combine, allowing the seasoning to coat the beef evenly.
- Mix in 16 ounces of frozen cauliflower rice and one can of diced tomatoes with green chilies. Bring the mixture to a simmer over medium heat, stirring occasionally. Cook for about 10 minutes, or until the cauliflower is heated through.
- Reduce the heat to low and sprinkle 1 cup of shredded cheddar cheese evenly over the top. Cover the skillet and let it cook for 2-3 minutes, until the cheese is melted and bubbly.
- Remove the skillet from heat, and it's ready to serve! Spoon the cheesy Taco Ground Beef & Cauliflower Rice onto plates, optionally topping with creamy avocado slices, dollops of sour cream, or spicy jalapeños for an extra kick.
