  • ½ cup Water Adjust for your desired consistency.
  • 1 cup Diced Bell Pepper Feel free to swap for your favorite veggies!
  • 1 medium Diced Onion Shallots can be a wonderful substitute.
  • 2 tablespoons Oil (Olive or Butter) Use any cooking oil of your choice.
  • 1 cup Shredded Cheddar Cheese Consider Monterey Jack or Pepper Jack for a spicy kick!

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil over medium heat in a large skillet. Add 1 diced onion and 1 diced bell pepper, sautéing for 3-4 minutes until tender and fragrant.
  2. Add 1 pound of ground beef, breaking it apart with a spatula, and cook for about 5-7 minutes until browned. Stir in 2 tablespoons of taco seasoning and pour ½ cup of water.
  3. Mix in 1 bag of frozen cauliflower rice and a can of diced tomatoes with chilies. Cover and let simmer on medium heat for about 10 minutes.
  4. Sprinkle 1 cup of shredded cheddar cheese evenly over the top, cover, and allow to melt for about 2-3 minutes.
  5. Serve with your favorite toppings like sliced avocado, sour cream, and jalapeños.
