  • 1 tablespoon canola oil
  • 1 tablespoon butter can substitute margarine or omit for dairy-free
  • 1 zucchini diced
  • 1 onion chopped
  • 1 cup carrots shredded
  • 1 bell pepper sliced
  • 1 cup frozen corn
  • 1 cup grape tomatoes halved
  • 2 cloves garlic minced
  • 1 jalapeno finely chopped, optional
  • 1/4 cup fresh cilantro chopped, optional
For the Protein and Pasta
  • 1 pound ground beef can substitute with ground turkey or plant-based alternatives
  • 2 tablespoons taco seasoning
  • 8 ounces angel hair pasta can substitute with rice or cauliflower rice
  • 1 cup water for cooking the pasta

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat canola oil and butter over medium heat until melted and bubbling.
  2. Add diced zucchini, chopped onion, shredded carrot, and sliced bell pepper. Sauté for about 5 minutes until softened.
  3. Sprinkle with salt and pepper, adjusting to preference. Cook for another minute.
  4. Boil water in a separate pot and cook angel hair pasta according to package instructions. Once cooked, drain and set aside.
  5. Remove vegetables and add ground beef to the same skillet, cooking until browned, about 5-7 minutes.
  6. Drain excess grease, return beef to heat and stir in taco seasoning and water. Simmer for 2 minutes.
  7. Mix in minced garlic, chopped jalapeño, corn, and grape tomatoes.
  8. Combine cooked pasta and sautéed vegetables back into the skillet. Heat for 2 minutes and serve.
