  • 2 pounds Baby Carrots Fresh for best texture
  • 1/4 cup Brown Sugar Can substitute with coconut sugar
  • 3 tablespoons Honey Alternatively, maple syrup can be used
  • 1/4 cup Butter Can replace with coconut oil for dairy-free
  • 1/4 cup Water
  • 1/4 teaspoon Salt Adjust according to taste
  • Fresh Dill Optional garnish, can substitute with parsley

Method
 

Step-by-Step Instructions
  1. Pour 1/4 cup of water into the bottom of your slow cooker to create steam.
  2. Place 2 pounds of rinsed baby carrots into the slow cooker on top of the water.
  3. Sprinkle 1/4 cup of brown sugar, 3 tablespoons of honey, and 1/4 teaspoon of salt over the carrots.
  4. Cut 1/4 cup of butter into 4-6 pieces and distribute over the carrots.
  5. Cover and set the slow cooker to cook on HIGH for 3 to 4 hours.
  6. Stir gently at the 2-hour mark to distribute the glaze.
  7. After 3-4 hours, check for doneness and serve, garnishing with fresh dill if desired.
