  • 2 cups kale masseged for tenderness
  • 1 cup carrots shredded
  • 1 medium red bell pepper sliced
  • 0.5 cup red cabbage sliced
  • 1 cup bean sprouts fresh
  • 1 cup pineapple diced
For the Protein
  • 1 cup cooked chicken shredded
  • 0.5 cup sweet chili dressing homemade or store-bought
For the Garnish
  • 2 tablespoons sesame seeds
  • 0.5 cup green onions chopped
  • 0.5 cup cilantro chopped

Method
 

Cooking Instructions
  1. Rinse quinoa under cold water. Combine with water or coconut milk in a medium saucepan, bring to a boil, then simmer for 15-20 minutes. Let it stand for 5 minutes before fluffing.
  2. Wash and chop vegetables: slice kale, shred carrots, slice red bell pepper, chop red cabbage, and rinse bean sprouts. Dice pineapple.
  3. Massage kale in a mixing bowl for 2-3 minutes until tender and vibrant. Set aside.
  4. Assemble bowls by placing 1/2 cup cooked quinoa at the base, topping with kale, assorted vegetables, and 1/2 cup shredded chicken.
  5. Drizzle sweet chili dressing over each bowl and garnish with sesame seeds, green onions, and cilantro.
