  • to taste Sea Salt & Fresh Cracked Black Pepper Adjust to personal taste.
  • to taste Balsamic Glaze Regular balsamic vinegar can be used, but glaze provides a thicker consistency.

Method
 

Preparation Steps
  1. Begin by rinsing the ripe yellow peaches and cherry tomatoes under cold water, then pat them dry with a kitchen towel.
  2. Dice the peaches into bite-sized chunks and halve the cherry tomatoes. Combine these beautifully chopped ingredients in a large mixing bowl.
  3. Gently fold in the fresh mozzarella pearls, chopped red onion, and chopped fresh basil into the bowl.
  4. Drizzle the mixture with extra virgin olive oil and white wine vinegar. Sprinkle sea salt and fresh black pepper, and toss gently.
  5. Gently mix all the ingredients in the bowl and transfer the salad onto a serving platter.
  6. Drizzle the salad with balsamic glaze and garnish with additional fresh basil if desired.
