Method
 

Preparation Instructions
  1. Preheat your oven to 425°F (220°C) to ensure perfect caramelization of the vegetables.
  2. Toss sliced zucchini, yellow squash, red bell pepper, red onion, and button mushrooms together on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Spread evenly and roast for 10 minutes.
  3. Add halved cherry tomatoes and minced garlic to the roasted vegetables and toss well. Roast for another 10 minutes until tender and slightly golden.
  4. In a large pot of salted boiling water, cook refrigerated three cheese tortellini according to package instructions, usually around 7-8 minutes.
  5. Once the tortellini is done, drain it and transfer to a large serving bowl. Add roasted veggies and pesto, mixing gently until evenly coated.
  6. Serve warm topped with freshly grated Parmesan cheese.
