Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients and prepare the vegetables for roasting.
  2. Chop veggies and spread them out on a rimmed baking sheet in a single layer.
  3. Drizzle with olive oil, kosher salt, and black pepper. Toss to coat and roast for 20 minutes.
  4. Boil salted water in a large pot. Cook tortellini according to package instructions, usually 3-5 minutes.
  5. In a food processor, blend basil, garlic, olive oil, vinegar, red pepper flakes, and salt until smooth. Adjust thickness with water.
  6. Toss drained tortellini with the basil vinaigrette and fold in the roasted vegetables. Serve immediately.
