Step-by-Step Instructions
  1. In a medium mixing bowl, combine sharp cheddar cheese, diced bell peppers, jalapeños, and pickled jalapeños. Add vinegar, mayo, garlic powder, sweet paprika, and salt. Mix until well blended and creamy. Chill in the refrigerator for at least 30 minutes.
  2. Heat a skillet over medium heat and cook the bacon for 8–10 minutes, flipping until crispy. Drain on paper towels.
  3. While bacon cooks, toast your bread until golden brown. Optionally spread mayo on one side before toasting.
  4. To assemble, spread mayo on one side of two slices of toasted bread. Layer pimento cheese, bacon, lettuce, and tomato. Place the second slice of bread on top, mayo-side down.
  5. Cut the sandwich in half or quarters and serve immediately with chips or salad.
