  • 1 can Black Beans drain and rinse thoroughly
  • 1 cup Corn canned or frozen, drained
  • 2 Roma Tomatoes chopped finely
  • 1 Bell Pepper any color, diced
  • 0.5 Red Onion finely chopped
  • 0.25 bunch Cilantro fresh, chopped
For the Dressing
  • 0.25 cup Extra Virgin Olive Oil high-quality
  • 1 Fresh Lime Juice juice from about one lime
  • 2 tablespoons Balsamic Vinegar adjust to taste
  • Salt to taste
  • 0.5 teaspoon Garlic Powder or fresh garlic
  • 1 teaspoon Cumin
  • Chili Powder optional
For Garnish
  • 1 Avocado added just before serving

Method
 

Preparation Steps
  1. In a large mixing bowl, combine the black beans, corn, Roma tomatoes, bell pepper, red onion, and cilantro.
  2. In a separate small bowl, whisk together the olive oil, lime juice, balsamic vinegar, salt, garlic powder, cumin, and chili powder.
  3. Pour the dressing over the bean and vegetable mixture and stir gently to combine.
  4. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Just before serving, dice the avocado and add it to the Cowboy Caviar.
