Step-by-Step Instructions
  1. Prepare Thyme Syrup: In a small saucepan, combine ½ cup sugar, ½ cup water, and 4 sprigs of fresh thyme. Heat over medium-low flame for 5 minutes until the sugar dissolves and the thyme infuses. Remove from heat, let cool for 10 minutes, and strain out the thyme.
  2. Juice Lemon: Cut a fresh lemon in half and squeeze until you have approximately 1 ounce of lemon juice, straining out any seeds.
  3. Mix Ingredients: In a shaker, combine 2 tablespoons of fig jam, 2 ounces of gin, 1 ounce of lemon juice, and 1 ounce of thyme syrup. Stir or shake until well blended.
  4. Prepare Glasses: Fill glasses with clear ice.
  5. Add Sparkling Water: Strain the mixture into each glass over the ice, filling about ¾ full. Top with 3 ounces of sparkling water.
  6. Garnish: Garnish each glass with a sprig of thyme and a slice of fig.
