For the Black Bean Burger Base
  • 1 burger Actual Veggies Black Bean Veggie Burger Any preferred veggie burger can be used.
For the Fresh Veggies
  • 2 cups Chopped Lettuce Spinach or kale for added nutrients.
  • 1 medium Sliced Red Onion
  • 1 medium Sliced Bell Pepper
  • 1 medium Sliced Tomato
  • ¼ cup Chopped Cilantro
  • ½ cup Corn
For the Grains and Rice
  • 1 cup Mexican Style Rice (cooked) Quinoa or brown rice for a different grain option.
For the Creamy Sauce
  • 2 medium Roasted Poblano Peppers
  • 1 cup Unsweetened Almond Milk
  • 1 tablespoon Dried Onion Flakes
  • ¼ teaspoon Black Pepper
  • ¼ teaspoon Sea Salt
  • ½ cup Vegan Cream Cheese
  • 1 tablespoon Taco Seasoning
For the Finishing Touches
  • ½ cup Chunky Salsa

Cooking Instructions
  1. Begin by preheating your air fryer to 355°F. Place the Actual Veggies Black Bean Veggie Burger in the air fryer basket. Cook it for 12 minutes, flipping halfway through, until it turns golden brown and crispy.
  2. While the burger is cooking, wash and slice your red onion and bell peppers into thin strips. In a skillet over medium heat, add a splash of water or a little oil, then sauté these veggies for about 5–7 minutes until they’re slightly tender.
  3. Next, prepare the creamy poblano sauce. In your blender, combine the roasted poblano peppers, unsweetened almond milk, dried onion flakes, black pepper, sea salt, vegan cream cheese, and taco seasoning. Blend until smooth.
  4. In a large serving bowl, layer the chopped lettuce as the base. Add a scoop of Mexican-style rice, followed by the sautéed veggies, sliced tomato, fresh cilantro, and corn. Top it off with the crispy black bean burger and drizzled creamy poblano sauce.
  5. Gently mix to combine flavors. Serve immediately while the burger is hot.

Notes
