Ingredients
  

For the Chicken Marinade
  • 1/4 cup vegetable oil can substitute with olive oil
  • 2 pieces chicken breasts can substitute with thighs
  • 1 teaspoon ground cumin increase for bolder flavor
  • 1 teaspoon chili powder adjust for desired heat
  • 1 teaspoon dried oregano fresh oregano works beautifully
  • 2 cloves garlic minced, use fresh for best flavor
  • 1 orange juice and zest fresh is key
  • 1 lime juice and zest fresh preferred
For the Black Beans
  • 1 can black beans rinsed
  • 1 medium yellow onion can substitute with red onion
For the Rice
  • 1 cup jasmine rice or Basmati rice
  • 1/4 cup cilantro for garnish and flavor
For the Mango Salsa
  • 1 large mango diced fresh
  • 1/4 cup red onion finely diced
  • 1 lime juice fresh for best flavor

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine vegetable oil, orange juice and zest, lime juice and zest, minced garlic, cumin, chili powder, and oregano. Add chicken, coat, cover, and refrigerate for at least 30 minutes.
  2. Heat skillet over medium-high heat. Add marinated chicken and sear for 6-7 minutes on each side until golden brown and cooked through. Remove and let rest before slicing.
  3. In the same skillet, sauté diced onion until softened, about 3-4 minutes. Stir in minced garlic, cook for 1 minute, then add black beans, season, and simmer for 5-6 minutes.
  4. In a saucepan, heat vegetable oil and sauté diced onion. Stir in jasmine rice, coat with oil, then add chicken broth, bring to boil, reduce heat, cover, and simmer for 15 minutes. Stir in lime juice, lime zest, and cilantro after cooking.
  5. Combine diced mango, finely chopped red onion, chopped cilantro, and lime juice in a bowl. Toss to mix.
  6. Assemble bowls with rice, black beans, sliced chicken, and mango salsa. Serve immediately.
