- Preheat your oven to 375°F (190°C) and prepare a cookie sheet by greasing or lining it.
- In a large bowl, combine softened unsalted butter with brown sugar and granulated sugar. Beat until fluffy and pale, about 3-5 minutes.
- Add one room-temperature egg and pure vanilla extract. Mix until fully incorporated and smooth.
- Sift together all-purpose flour, baking soda, and salt in a separate bowl.
- Gradually mix the dry ingredients into the wet ingredients, stirring gently until just combined.
- Fold in the white chocolate chips, chopped pistachios, and dried cranberries (or cherries).
- Portion out heaping tablespoonfuls of dough onto the cookie sheet, leaving about 2 inches of space in between.
- Bake for 8-10 minutes until edges are light golden brown and centers are soft but set.
- Remove from the oven and cool for about 2 minutes before transferring to a wire rack.
