For the Wonton Chips
  • 12 wonton wrappers Wonton wrappers Cut in half diagonally before frying

For the Spicy Mayo
  • 3 tbsp Kewpie Japanese mayonnaise Regular mayo with mirin can be substituted

For the Toppings

Method
 

Step-by-Step Instructions
  1. Pat the sushi-grade ahi tuna dry with a paper towel. Coat with black and white sesame seeds, then sear for about 1 minute on each side. Dice and toss with light soy sauce, then refrigerate.
  2. Heat oil in a deep pot to 350°F. Fry wonton triangles in batches for about 30 seconds until golden brown. Drain excess oil on paper towels.
  3. Combine Kewpie mayonnaise, lime juice, and sriracha in a small bowl. Stir until smooth and refrigerate until ready to use.
  4. On a platter, layer the wonton chips, top with avocado slices, diced tuna, and drizzle with spicy mayo. Garnish with cilantro, green onions, and jalapeños.
