  • 1 can (15 oz) Black Beans drained and rinsed
  • 1 cup Sweet Corn thawed
  • 1 cup Roma Tomatoes diced
  • 1 each Orange Bell Pepper diced
  • 1/4 cup Red Onion finely chopped
  • 1 each Jalapeño Pepper diced
  • 1/4 cup Fresh Cilantro roughly chopped
For the Dressing
  • 1/4 cup Orange Juice freshly squeezed
  • 2 tablespoons Lime Juice
  • 2 tablespoons Apple Cider Vinegar
  • 1 teaspoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 1/2 teaspoon Garlic Powder
  • to taste Salt

Method
 

Preparation
  1. In a small bowl, whisk together the dressing ingredients until fully blended and set aside.
  2. Dice the Roma tomatoes and orange bell pepper. Finely chop the red onion and jalapeño.
  3. In a large mixing bowl, combine the black beans, sweet corn, and chopped veggies.
  4. Pour the dressing over the salad mixture and toss gently until well mixed.
  5. Serve immediately or chill for at least 1 hour before serving to enhance flavors.
