Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 cup black beans rinsed and drained
  • 1 cup corn frozen or canned (drained)
  • 1 red bell pepper diced
  • 1 avocado diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the shredded chicken, black beans, corn, red bell pepper, avocado, red onion, cherry tomatoes, and cilantro.
  2. In a separate small bowl, whisk together the lime juice, olive oil, chili powder, cumin, salt, and pepper until well combined.
  3. Pour the dressing over the salad mixture and gently toss until everything is evenly coated.
  4. Taste and adjust seasoning if necessary.
  5. Serve immediately or chill in the refrigerator for 30 minutes to allow flavors to meld.
