Ingredients

  • For the Chocolate Cookies:
    • 1 1/2 cups all-purpose flour
    • 1/2 cup unsweetened cocoa powder
    • 1 tsp espresso powder
    • 1/2 tsp baking soda
    • 1/4 tsp salt
    • 1/2 cup unsalted butter, softened
    • 1/2 cup granulated sugar
    • 1/2 cup brown sugar, packed
    • 1 large egg
    • 1/4 cup Baileys Irish Cream
  • For the Baileys Glaze:
    • 1 cup powdered sugar
    • 23 tbsp Baileys Irish Cream

Instructions

  1. Prepare the Dough: In a bowl, whisk together flour, cocoa powder, espresso powder, baking soda, and salt.
  2. Cream the Butter and Sugar: In a separate bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and Baileys Irish Cream, mixing until well combined.
  3. Combine & Chill: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Refrigerate the dough for 30 minutes.
  4. Bake: Preheat the oven to 350°F and line a baking sheet with parchment paper. Roll dough into balls and place on the sheet, spacing them apart. Bake for 10 minutes, then let cool completely.
  5. Make the Glaze: Whisk powdered sugar and Baileys until smooth. Adjust the consistency by adding more Baileys if needed.
  6. Dip & Decorate: Dip half of each cooled cookie into the glaze and let set before serving.
