- Preheat your air fryer to 380°F or your oven to 400°F. Cube the sweet potatoes into 1-inch pieces and toss them with olive oil, salt, and pepper. Air fry for 15 minutes, flipping halfway, or roast in the oven for 25-30 minutes until tender.
- Prepare the chicken tenders by cooking in an air fryer set to 400°F for 4 minutes. Brush BBQ sauce on the chicken and air fry for an additional 3-4 minutes until the internal temperature reaches 165°F, or bake until fully cooked and saucy.
- In a bowl, mix mayonnaise, lemon juice or vinegar, and sweetener for the coleslaw dressing. Fold in the coleslaw mix and chill in the refrigerator while finishing the other components.
- Assemble the bowls by dividing crispy sweet potatoes, chicken, and creamy coleslaw into four bowls. Add optional garnishes like avocado, cilantro, and pumpkin seeds. Serve immediately.
