Directions
  1. Preheat your air fryer to 380°F or your oven to 400°F. Cube the sweet potatoes into 1-inch pieces and toss them with olive oil, salt, and pepper. Air fry for 15 minutes, flipping halfway, or roast in the oven for 25-30 minutes until tender.
  2. Prepare the chicken tenders by cooking in an air fryer set to 400°F for 4 minutes. Brush BBQ sauce on the chicken and air fry for an additional 3-4 minutes until the internal temperature reaches 165°F, or bake until fully cooked and saucy.
  3. In a bowl, mix mayonnaise, lemon juice or vinegar, and sweetener for the coleslaw dressing. Fold in the coleslaw mix and chill in the refrigerator while finishing the other components.
  4. Assemble the bowls by dividing crispy sweet potatoes, chicken, and creamy coleslaw into four bowls. Add optional garnishes like avocado, cilantro, and pumpkin seeds. Serve immediately.
