  • 2-3 cloves Garlic Fresh garlic elevates the dish; garlic powder can substitute.
  • 2 tablespoons Canned Mild Green Chilies Use jalapeños for more heat.
  • 1 tablespoon Apple Cider Vinegar White vinegar works well too.
  • 3 tablespoons Lime Juice Fresh lime juice is preferred; bottled is fine.
  • cup Fresh Cilantro or Flat-Leaf Italian Parsley Omit for allergies or swap with another herb.
  • 1 ½ teaspoons Sweetener (Swerve or Coconut Sugar) Omit for a sugar-free option.
  • ½ to 1 teaspoon Ground Chipotle Powder Adjust according to spice tolerance.
  • 1 teaspoon Sea Salt Tailor amount to taste.
  • ¼ teaspoon Black Pepper Freshly cracked black pepper is preferred.
  • ¼ cup Chicken Broth Water can substitute if needed.

Method
 

Preparation Steps
  1. In a blender or food processor, combine tomato sauce, olive or avocado oil, garlic, green chilies, apple cider vinegar, lime juice, sweetener, chipotle powder, sea salt, and black pepper. Blend until smooth.
  2. Place chicken into the slow cooker and pour the prepared sauce over the chicken, ensuring each piece is well coated. Cook on high for 4 to 6 hours or low for 6 to 8 hours.
  3. For Instant Pot, spray inner pot with non-stick oil, add chicken, and pour the blended sauce over it. Cook on 'Slow Cook' for 4 hours.
  4. After Instant Pot cooking, transfer chicken to a platter and set pot to 'Sauté.' Let the sauce simmer for 6-8 minutes to thicken.
  5. Serve hot, drizzled with thickened sauce and garnish with cilantro or parsley. Pair with cauliflower rice or vegetables.
