Preparation Steps
- In a blender or food processor, combine tomato sauce, olive or avocado oil, garlic, green chilies, apple cider vinegar, lime juice, sweetener, chipotle powder, sea salt, and black pepper. Blend until smooth.
- Place chicken into the slow cooker and pour the prepared sauce over the chicken, ensuring each piece is well coated. Cook on high for 4 to 6 hours or low for 6 to 8 hours.
- For Instant Pot, spray inner pot with non-stick oil, add chicken, and pour the blended sauce over it. Cook on 'Slow Cook' for 4 hours.
- After Instant Pot cooking, transfer chicken to a platter and set pot to 'Sauté.' Let the sauce simmer for 6-8 minutes to thicken.
- Serve hot, drizzled with thickened sauce and garnish with cilantro or parsley. Pair with cauliflower rice or vegetables.
