Step‑by‑Step Instructions for Huevos Rancheros Casserole
  1. Preheat your oven to 375°F (190°C). Grease a 13×9-inch baking dish with cooking spray or olive oil.
  2. In a bowl, combine salsa with taco seasoning, stirring well. Set aside.
  3. Spread 1 cup of the salsa mixture in the baking dish. Layer in tostadas, half of the beans and scallions, and half of the cheese.
  4. Pour remaining salsa over the first layer, then add another set of tostadas, remaining beans, scallions, and cheese.
  5. Create six wells in salsa, crack an egg into each well, and sprinkle with salt and pepper.
  6. Cover with aluminum foil and bake for 35 to 45 minutes, checking egg whites at 35 minutes.
  7. Allow the casserole to rest for 5 minutes before serving.
