  • 1 cup Shredded Cheese (Mozzarella & Cheddar) Can swap for pepper jack for spice.
  • 6 slices Bacon Cooked and crumbled.
  • 1/2 cup Sour Cream Greek yogurt is a healthy alternative.
  • 2 tablespoons Green Onions Chopped, optional.

Method
 

Step-by-Step Instructions for Loaded Potato Skins
  1. Preheat your oven to 400°F (200°C). Poke each potato with a fork and bake for 1 hour until tender.
  2. Let the potatoes cool for 15 minutes. Cut in half lengthwise and scoop out flesh, leaving ¼ inch skin.
  3. Brush the insides and outsides with melted butter and sprinkle with salt and pepper. Place cut-side up on a baking sheet.
  4. Broil the potato skins for 7-8 minutes until crispy and golden.
  5. Add a dollop of sour cream and top with cheese. Return to the broiler for another 3-4 minutes to melt cheese.
  6. Sprinkle with crumbled bacon and green onions, serve hot with dipping sauce.
