Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Wash the Russet potatoes thoroughly and poke holes with a fork. Bake on the oven rack for about 1 hour until crispy.
  3. Let potatoes cool for 15 minutes, slice in half lengthwise and scoop out some flesh, leaving a quarter-inch of potato.
  4. Brush inside and outside of each potato skin with melted unsalted butter. Broil for 7-8 minutes until golden brown.
  5. Fill each potato skin with sour cream and shredded cheese. Broil again for 3-4 minutes until cheese is melty.
  6. Top with crumbled bacon and chopped green onions, and serve hot.
