  • 1 cup Unsalted Butter at room temperature
  • 1 cup Light Brown Sugar
  • 1 Large Egg at room temperature
  • 1 teaspoon Vanilla Extract or Vanilla Bean Paste
  • 1.5 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 pinch Fine Salt
  • Ground Cinnamon optional
  • Ground Nutmeg optional
  • 2 cups Old-Fashioned or Rolled Oats
  • 1 cup Butterscotch Chips or substitute with chocolate chips

Method
 

Preparation
  1. Prepare Baking Sheets by lining two large baking sheets with parchment paper or silicone baking mats.
  2. Cream Ingredients by mixing together softened butter and brown sugar on medium-high speed for 1-2 minutes until light and fluffy.
  3. Add Egg and Vanilla by mixing in the egg and vanilla extract until smooth.
  4. Add Dry Ingredients gradually along with baking soda and salt, mixing on low speed until combined.
  5. Incorporate Oats and Chips by gently stirring in oats and butterscotch chips until evenly mixed.
  6. Chill Dough by forming it into balls and placing them on a baking sheet before refrigerating for 30 minutes.
  7. Preheat Oven to 350°F (175°C) while the dough is chilling.
  8. Bake the dough balls for 13-14 minutes until slightly underbaked in the center.
  9. Cool cookies on the baking sheet for about 10 minutes before transferring to a wire rack.
