Preparation
- Prepare Baking Sheets by lining two large baking sheets with parchment paper or silicone baking mats.
- Cream Ingredients by mixing together softened butter and brown sugar on medium-high speed for 1-2 minutes until light and fluffy.
- Add Egg and Vanilla by mixing in the egg and vanilla extract until smooth.
- Add Dry Ingredients gradually along with baking soda and salt, mixing on low speed until combined.
- Incorporate Oats and Chips by gently stirring in oats and butterscotch chips until evenly mixed.
- Chill Dough by forming it into balls and placing them on a baking sheet before refrigerating for 30 minutes.
- Preheat Oven to 350°F (175°C) while the dough is chilling.
- Bake the dough balls for 13-14 minutes until slightly underbaked in the center.
- Cool cookies on the baking sheet for about 10 minutes before transferring to a wire rack.
