Instructions
  1. Heat a large skillet over medium-high heat. Add olive oil and butter, and melt them together for about 1-2 minutes.
  2. Add sliced zucchini in a single layer, season with salt and pepper, and sauté for 3-4 minutes until tender and slightly golden. Remove from skillet.
  3. In the same skillet, add remaining butter and sauté diced onion for about 2 minutes until translucent and fragrant.
  4. Stir in mushrooms and cook for 5-7 minutes until browned and moisture is released.
  5. Reduce heat, add minced garlic and herbs, and cook for about 20 seconds until fragrant, being careful not to burn the garlic.
  6. Return zucchini to skillet, add vegetable broth, and simmer for 2 minutes to meld flavors.
  7. Adjust seasoning with additional salt and pepper as needed.
  8. Remove from heat, garnish with parsley and Parmesan cheese, serve warm, and enjoy.
