- Heat a large skillet over medium-high heat. Add olive oil and butter, and melt them together for about 1-2 minutes.
- Add sliced zucchini in a single layer, season with salt and pepper, and sauté for 3-4 minutes until tender and slightly golden. Remove from skillet.
- In the same skillet, add remaining butter and sauté diced onion for about 2 minutes until translucent and fragrant.
- Stir in mushrooms and cook for 5-7 minutes until browned and moisture is released.
- Reduce heat, add minced garlic and herbs, and cook for about 20 seconds until fragrant, being careful not to burn the garlic.
- Return zucchini to skillet, add vegetable broth, and simmer for 2 minutes to meld flavors.
- Adjust seasoning with additional salt and pepper as needed.
- Remove from heat, garnish with parsley and Parmesan cheese, serve warm, and enjoy.
