Ingredients
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup cooked rice (white or brown)
- 1 cup mixed frozen vegetables (carrots, peas, corn)
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons soy sauce (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until softened.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Pour in the broth and bring to a gentle boil.
- Add the cooked rice, mixed frozen vegetables, dried thyme, salt, and black pepper. Stir well to combine.
- Reduce the heat and let the soup simmer for about 5 minutes, allowing the flavors to meld.
- If desired, stir in the soy sauce for added flavor.
- Serve hot, garnished with fresh parsley.
Notes
- For a creamier soup, add a splash of heavy cream or coconut milk just before serving.
- To make it heartier, include shredded rotisserie chicken or tofu for added protein.
