  • 4 black cod fillets (46 oz each)
  • Kosher salt
  • Cooking spray or 2 tbsp vegetable oil

Instructions

  • Prepare the Marinade: In a saucepan, boil 1/4 cup sake and 1/4 cup mirin for 20 seconds. Lower the heat and stir in 1/4 cup white miso paste and 3 tbsp sugar. Whisk until fully dissolved, then cool completely.
  • Marinate the Fish: Pat dry the black cod fillets. Place in a sealable bag or container, pour in the marinade, and refrigerate for 2-3 days.
  • Preheat Broiler: Preheat your broiler and line a baking sheet with foil. Lightly coat with cooking spray or oil.
  • Cook the Fish: Remove the fillets from the marinade, wipe off excess, and broil for 8-12 minutes until caramelized and opaque in the center.
