Ingredients
- 1/4 cup sake
- 1/4 cup mirin
- 1/4 cup white miso paste
- 3 tbsp granulated sugar
- 4 black cod fillets (4–6 oz each)
- Kosher salt
- Cooking spray or 2 tbsp vegetable oil
Instructions
- Prepare the Marinade: In a saucepan, boil 1/4 cup sake and 1/4 cup mirin for 20 seconds. Lower the heat and stir in 1/4 cup white miso paste and 3 tbsp sugar. Whisk until fully dissolved, then cool completely.
- Marinate the Fish: Pat dry the black cod fillets. Place in a sealable bag or container, pour in the marinade, and refrigerate for 2-3 days.
- Preheat Broiler: Preheat your broiler and line a baking sheet with foil. Lightly coat with cooking spray or oil.
- Cook the Fish: Remove the fillets from the marinade, wipe off excess, and broil for 8-12 minutes until caramelized and opaque in the center.
- Serve: Serve hot with your favorite sides and enjoy!
Notes
- Marination Time: Marinate the fish for at least 48 hours for the best flavor.
- Substitutes: If black cod isn’t available, you can use sablefish, salmon, or sea bass.
- Broiling Tips: Broiling creates a perfect golden crust, but pan-searing also works well if you don’t have a broiler.
