Description

Picture this: the smell of crispy, golden breakfast potatoes filling your kitchen as you prepare for the day ahead. Breakfast potatoes are a beloved classic, and when made in the air fryer, they’re even better—crispy on the outside, fluffy on the inside, and much healthier than their fried counterparts. Whether you’re hosting a weekend brunch or looking for a quick breakfast side dish, air fryer breakfast potatoes are the ultimate solution.

Ingredients

  • 34 russet potatoes (Yukon Gold works well too)
  • 23 tablespoons olive oil
  • 1 teaspoon salt (adjust to taste)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon sweet paprika

Cooking spray (as needed

Instructions

  1. Prep the Potatoes:
    • Peel the potatoes or leave the skin on for a rustic texture. Cut into 1-inch pieces for even cooking.
  2. Season the Potatoes:
    • In a large bowl, toss potatoes with olive oil, salt, garlic powder, onion powder, and sweet paprika until evenly coated.
  3. Preheat the Air Fryer:
    • Set the air fryer to 400°F (200°C) and preheat for 3–5 minutes.
  4. Cook the Potatoes:
    • Spray the air fryer basket with cooking spray. Add the seasoned potatoes in a single layer to avoid overcrowding.
    • Air fry for 20 minutes, shaking the basket halfway through for even crispiness.
  5. Serve:
    • Transfer the potatoes to a serving dish and enjoy hot. Perfect with eggs, bacon, or other breakfast favorites.

Notes

  • Make-Ahead Tip: Prep and cut potatoes the night before. Store in water in the fridge to prevent browning.

Variations: Add shredded cheese, cayenne pepper, or fresh herbs for a twist
