Ingredients
For the Carrots:
- 1 pound medium carrots (8–10 carrots)
- 2 teaspoons olive oil
- ½ teaspoon kosher salt
- ½ teaspoon garlic powder

- 1 medium lemon
- 1 teaspoon fresh dill or parsley, finely chopped
Instructions
- Prepare the Carrots:
- Trim and peel the carrots, then cut them crosswise into 3-inch pieces. Halve thicker ends lengthwise to ensure even cooking.
- Season the Carrots:
- Place the carrots in a large bowl. Add olive oil, kosher salt, and garlic powder. Toss until evenly coated.
- Preheat the Air Fryer:
- Set your air fryer to 360°F and preheat for a few minutes.
- Cook the Carrots:
- Arrange the seasoned carrots in the air fryer basket, allowing for slight overlap.
- Air fry for 10–12 minutes, shaking the basket every 5 minutes to ensure even cooking.
- Prepare the Garnishes:
- Halve the lemon and juice one half to yield about 1 teaspoon of juice. Slice the remaining half into wedges for serving.
- Finely chop the fresh dill or parsley.
- Finish and Serve:
- Transfer the cooked carrots back to the bowl. Drizzle with lemon juice and sprinkle with fresh herbs. Toss gently to combine.
- Serve warm with lemon wedges on the side.
