Description

Crispy, tender, and slightly caramelized, these air fryer carrots are a quick and delicious side dish. Perfectly seasoned and roasted to golden perfection, they’re a crowd-pleaser that’s as healthy as it is flavorful.

Ingredients

For the Carrots:

  • 1 pound medium carrots (810 carrots)
  • 2 teaspoons olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon garlic powder

For the Garnish:

  • 1 medium lemon
  • 1 teaspoon fresh dill or parsley, finely chopped

Instructions

  1. Prepare the Carrots:
    • Trim and peel the carrots, then cut them crosswise into 3-inch pieces. Halve thicker ends lengthwise to ensure even cooking.
  2. Season the Carrots:
    • Place the carrots in a large bowl. Add olive oil, kosher salt, and garlic powder. Toss until evenly coated.
  3. Preheat the Air Fryer:
    • Set your air fryer to 360°F and preheat for a few minutes.
  4. Cook the Carrots:
    • Arrange the seasoned carrots in the air fryer basket, allowing for slight overlap.
    • Air fry for 10–12 minutes, shaking the basket every 5 minutes to ensure even cooking.
  5. Prepare the Garnishes:
    • Halve the lemon and juice one half to yield about 1 teaspoon of juice. Slice the remaining half into wedges for serving.
    • Finely chop the fresh dill or parsley.
  6. Finish and Serve:
    • Transfer the cooked carrots back to the bowl. Drizzle with lemon juice and sprinkle with fresh herbs. Toss gently to combine.
    • Serve warm with lemon wedges on the side.

Notes

  • Preheating the air fryer ensures crispy, evenly cooked carrots.
  • For best results, cut the carrots into uniform sizes to ensure even cooking.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer for 2–3 minutes.
