Ingredients
- 1 pound elbow pasta
- 1 ⅔ cups mozzarella cheese, hand-grated
- 1 ⅔ cups sharp cheddar cheese, hand-grated
- 1 ⅔ cups Emmental or Jarlsberg cheese, hand-grated
- 1 cup parmesan cheese, hand-grated (reserved for topping)
- 1 pound cooked lobster meat (fresh or frozen)
- 4 cups whole milk
- 1 cup half-and-half
- ⅓ cup all-purpose flour
- 5 tablespoons butter (divided)
- Salt and pepper, to taste
- Chives, for garnish (optional)
Instructions
- Cook the Pasta
- Boil pasta for 1 minute less than package instructions for an al dente texture.
- Drain and toss with 1 tablespoon of butter.
- Make the Roux
- Melt remaining butter in a medium pan over low heat.
- Whisk in flour over medium heat and cook until golden.
- Add Milk and Half-and-Half
- Gradually whisk in milk and half-and-half. Season with salt and pepper.
- Thicken the Sauce
- Stir constantly over medium heat for 6–12 minutes until thickened.
- Incorporate Cheeses
- Stir in mozzarella, cheddar, and Emmental until melted.
- Combine Pasta and Lobster
- Mix pasta with cheese sauce. Fold in 75% of lobster meat.
- Assemble and Bake
- Grease a 9×13” dish, pour in pasta mixture, and top with parmesan and remaining lobster.
- Bake at 350°F for 25 minutes, finishing with a golden crust.
- Garnish and Serve
- Sprinkle chives for garnish and serve hot.
