Ingredients

  • 1 pound elbow pasta
  • 1 ⅔ cups mozzarella cheese, hand-grated
  • 1 ⅔ cups sharp cheddar cheese, hand-grated
  • 1 ⅔ cups Emmental or Jarlsberg cheese, hand-grated
  • 1 cup parmesan cheese, hand-grated (reserved for topping)
  • 1 pound cooked lobster meat (fresh or frozen)
  • 4 cups whole milk
  • 1 cup half-and-half
  • ⅓ cup all-purpose flour
  • 5 tablespoons butter (divided)
  • Salt and pepper, to taste
  • Chives, for garnish (optional)

Instructions

  1. Cook the Pasta
    • Boil pasta for 1 minute less than package instructions for an al dente texture.
    • Drain and toss with 1 tablespoon of butter.
  2. Make the Roux
    • Melt remaining butter in a medium pan over low heat.
    • Whisk in flour over medium heat and cook until golden.
  3. Add Milk and Half-and-Half
    • Gradually whisk in milk and half-and-half. Season with salt and pepper.
  4. Thicken the Sauce
    • Stir constantly over medium heat for 6–12 minutes until thickened.
  5. Incorporate Cheeses
    • Stir in mozzarella, cheddar, and Emmental until melted.
  6. Combine Pasta and Lobster
    • Mix pasta with cheese sauce. Fold in 75% of lobster meat.
  7. Assemble and Bake
    • Grease a 9×13” dish, pour in pasta mixture, and top with parmesan and remaining lobster.
    • Bake at 350°F for 25 minutes, finishing with a golden crust.
  8. Garnish and Serve
    • Sprinkle chives for garnish and serve hot.
