Asian Mango Chicken is a flavorful dish featuring tender chicken pieces cooked with fresh mango, bell peppers, and snap peas, all tossed in a savory sauce.
Ingredients
- 2 boneless, skinless chicken breasts (about 1 pound)
- 1 ripe mango, peeled and diced
- 1 tablespoon vegetable oil
- 1 tablespoon soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 red bell pepper, sliced
- 1 cup snap peas, trimmed
- 2 green onions, chopped
- Salt and pepper to taste
- Cooked jasmine rice or quinoa for serving
Instructions
- Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
- In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the garlic and ginger, sautéing for about 30 seconds until fragrant.
- Add the sliced red bell pepper and snap peas to the skillet, cooking for 3-4 minutes until they start to soften.
- Return the cooked chicken to the skillet. Stir in the diced mango, soy sauce, hoisin sauce, and honey. Cook for an additional 2-3 minutes until everything is heated through and the sauce is well combined.
- Remove from heat and stir in the chopped green onions. Serve over cooked jasmine rice or quinoa.
Notes
- For added spice, include a teaspoon of red pepper flakes or a splash of sriracha in the sauce.
- Substitute the mango with pineapple or peaches for a different fruity flavor.
