Ingredients
- 1 cup granulated sugar
- 1 cup milk
- 1/2 cup all-purpose flour
- 1/2 cup unsalted butter, melted
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup fresh lemon juice
- Zest of 1 lemon
Instructions
- Preheat your oven to 350°F. Grease a 9-inch pie dish with butter or non-stick spray.
- In a large mixing bowl, combine the sugar, milk, flour, melted butter, eggs, vanilla extract, and salt. Whisk until the mixture is smooth and well combined.
- Add the fresh lemon juice and lemon zest to the mixture, stirring gently until incorporated.
- Pour the batter into the prepared pie dish.
- Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow the pie to cool for at least 30 minutes before slicing. The pie will firm up as it cools.

Notes
- For a richer flavor, try adding a teaspoon of almond extract in place of vanilla.
- If you prefer a sweeter pie, increase the sugar to 1 1/4 cups.
