Description

A delightful and surprising dessert that combines the flavors of lemon in a unique pie that forms its own crust while baking.

Ingredients

  • 1 cup granulated sugar
  • 1 cup milk
  • 1/2 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 350°F. Grease a 9-inch pie dish with butter or non-stick spray.
  2. In a large mixing bowl, combine the sugar, milk, flour, melted butter, eggs, vanilla extract, and salt. Whisk until the mixture is smooth and well combined.
  3. Add the fresh lemon juice and lemon zest to the mixture, stirring gently until incorporated.
  4. Pour the batter into the prepared pie dish.
  5. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  6. Allow the pie to cool for at least 30 minutes before slicing. The pie will firm up as it cools.
  7. Serve warm or chilled, and enjoy!

Notes

  • For a richer flavor, try adding a teaspoon of almond extract in place of vanilla.
  • If you prefer a sweeter pie, increase the sugar to 1 1/4 cups.
