Description

These Bailey’s Irish Cream Truffles are the ultimate indulgence for St. Patrick’s Day. Rich, creamy, and infused with the signature taste of Bailey’s, these no-bake chocolate truffles are coated in a velvety chocolate shell and topped with festive sprinkles. Perfect for parties, gifts, or a luxurious treat just for you!

Ingredients

  • 3 cups finely crushed graham crackers (about 18 full-size crackers)
  • 1 cup powdered sugar
  • 1/3 cup light corn syrup
  • 1/3 cup Bailey’s Irish Cream
  • 12 ounces chocolate almond bark or high-quality chocolate (dark or milk)
  • Festive sprinkles (optional, for decoration)

Instructions

1. Make the Truffle Dough

  1. Crush the Graham Crackers – Pulse graham crackers in a food processor until finely ground.
  2. Mix Ingredients – In a large bowl, combine crushed graham crackers, powdered sugar, corn syrup, and Bailey’s Irish Cream. Stir until the mixture forms a sticky, firm dough.

2. Shape and Chill

  1. Roll into Balls – Use a tablespoon to scoop the mixture and roll into 30 small balls.
  2. Chill – Place truffles on a wax paper-lined baking sheet and refrigerate for 1 hour, until firm.

3. Coat in Chocolate

  1. Melt the Chocolate – Melt the almond bark or chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
  2. Dip Each Truffle – Using a fork or dipping tool, coat each truffle in the melted chocolate, letting the excess drip off.
  3. Decorate – Place truffles back on wax paper and immediately top with festive sprinkles before the chocolate hardens.

4. Set and Serve

  1. Allow to Set – Let truffles harden at room temperature or refrigerate for 30 minutes until firm.
  2. Enjoy or Store – Serve immediately, or store in an airtight container in the fridge for up to a week.

Notes

  • For a non-alcoholic version, replace Bailey’s with heavy cream or Irish cream coffee creamer.
  • For a flavor twist, add a pinch of sea salt or espresso powder to the chocolate coating.
  • Store in the freezer for up to 3 months for a make-ahead treat.
