Ingredients
- 3 cups finely crushed graham crackers (about 18 full-size crackers)
- 1 cup powdered sugar
- 1/3 cup light corn syrup
- 1/3 cup Bailey’s Irish Cream
- 12 ounces chocolate almond bark or high-quality chocolate (dark or milk)
- Festive sprinkles (optional, for decoration)
Instructions
1. Make the Truffle Dough
- Crush the Graham Crackers – Pulse graham crackers in a food processor until finely ground.
- Mix Ingredients – In a large bowl, combine crushed graham crackers, powdered sugar, corn syrup, and Bailey’s Irish Cream. Stir until the mixture forms a sticky, firm dough.
2. Shape and Chill
- Roll into Balls – Use a tablespoon to scoop the mixture and roll into 30 small balls.
- Chill – Place truffles on a wax paper-lined baking sheet and refrigerate for 1 hour, until firm.
3. Coat in Chocolate
- Melt the Chocolate – Melt the almond bark or chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
- Dip Each Truffle – Using a fork or dipping tool, coat each truffle in the melted chocolate, letting the excess drip off.
- Decorate – Place truffles back on wax paper and immediately top with festive sprinkles before the chocolate hardens.
4. Set and Serve
- Allow to Set – Let truffles harden at room temperature or refrigerate for 30 minutes until firm.
- Enjoy or Store – Serve immediately, or store in an airtight container in the fridge for up to a week.

- For a non-alcoholic version, replace Bailey’s with heavy cream or Irish cream coffee creamer.
