Ingredients
- 4 medium russet potatoes, scrubbed and cut into wedges
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried Italian seasoning (or a mix of dried oregano, basil, and thyme)
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (optional, for garnish)
- Dipping sauces (optional: marinara, ranch dressing, or garlic aioli)
Instructions
1. Preheat & Prep
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease it with cooking spray.
2. Slice & Season the Potatoes
- Cut each russet potato into 6-8 wedges (depending on size).
- In a large bowl, toss the potato wedges with olive oil, minced garlic, Italian seasoning, garlic powder, onion powder, paprika, salt, and black pepper.
- Sprinkle Parmesan cheese over the wedges and mix well to coat evenly.
3. Arrange & Bake
- Spread the seasoned potato wedges in a single layer on the prepared baking sheet. Ensure they aren’t touching to allow for even crisping.
- Bake for 35-40 minutes, flipping the wedges halfway through, until golden brown and crispy.
4. Garnish & Serve
- Remove from the oven and sprinkle with fresh parsley.
- Serve hot with your favorite dipping sauce and enjoy!
Notes
- For Extra Crispiness: Soak potato wedges in cold water for 30 minutes before baking to remove excess starch. Dry thoroughly before seasoning.
- Don’t Overcrowd the Pan: Arrange the wedges in a single layer with space between them for even crisping.
- Use Freshly Grated Parmesan: Avoid pre-grated cheese, as it contains anti-caking agents that prevent melting.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheating: Reheat in a 375°F (190°C) oven for 5-7 minutes to bring back crispiness.
