Description

Crispy on the outside, fluffy on the inside, and bursting with bold garlic-Parmesan flavor—these Baked Garlic Parmesan Potato Wedges are the ultimate side dish or snack! Perfectly seasoned and oven-baked to golden perfection, they deliver all the crunch and indulgence of fries without the deep frying. Serve them with your favorite dipping sauce for a crowd-pleasing treat that’s simple, delicious, and healthier than traditional fries!

Ingredients

  • 4 medium russet potatoes, scrubbed and cut into wedges
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning (or a mix of dried oregano, basil, and thyme)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional, for garnish)
  • Dipping sauces (optional: marinara, ranch dressing, or garlic aioli)

Instructions

1. Preheat & Prep

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or lightly grease it with cooking spray.

2. Slice & Season the Potatoes

  1. Cut each russet potato into 6-8 wedges (depending on size).
  2. In a large bowl, toss the potato wedges with olive oil, minced garlic, Italian seasoning, garlic powder, onion powder, paprika, salt, and black pepper.
  3. Sprinkle Parmesan cheese over the wedges and mix well to coat evenly.

3. Arrange & Bake

  1. Spread the seasoned potato wedges in a single layer on the prepared baking sheet. Ensure they aren’t touching to allow for even crisping.
  2. Bake for 35-40 minutes, flipping the wedges halfway through, until golden brown and crispy.

4. Garnish & Serve

  1. Remove from the oven and sprinkle with fresh parsley.
  2. Serve hot with your favorite dipping sauce and enjoy!

Notes

  • For Extra Crispiness: Soak potato wedges in cold water for 30 minutes before baking to remove excess starch. Dry thoroughly before seasoning.
  • Don’t Overcrowd the Pan: Arrange the wedges in a single layer with space between them for even crisping.
  • Use Freshly Grated Parmesan: Avoid pre-grated cheese, as it contains anti-caking agents that prevent melting.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheating: Reheat in a 375°F (190°C) oven for 5-7 minutes to bring back crispiness.
