Ingredients

  • 2 (6-ounce) salmon fillets
  • 1 bunch asparagus, trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 teaspoon fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat the oven to 400°F.
  2. Cut two large pieces of aluminum foil, about 12 inches long. Place one salmon fillet in the center of each piece of foil.
  3. Arrange the trimmed asparagus around the salmon fillets. Drizzle the olive oil over the salmon and asparagus, then sprinkle with salt and black pepper.
  4. In a small bowl, mix together the melted butter, minced garlic, lemon juice, and lemon zest. Pour the lemon garlic butter sauce evenly over the salmon and asparagus.
  5. Fold the sides of the foil over the salmon and asparagus to create a sealed packet. Make sure it is tightly sealed to prevent any steam from escaping.
  6. Place the foil packets on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Carefully open the foil packets (watch out for steam) and garnish with fresh parsley if desired. Serve immediately.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the lemon garlic butter sauce.
  • You can also substitute the asparagus with green beans or broccoli for a different flavor and texture.
