Description
A delicious and healthy recipe for baked salmon in foil with asparagus and a flavorful lemon garlic butter sauce.
Ingredients
- 2 (6-ounce) salmon fillets
 - 1 bunch asparagus, trimmed
 - 2 tablespoons olive oil
 - 1 teaspoon salt
 - 1/2 teaspoon black pepper
 - 2 tablespoons unsalted butter, melted
 - 2 cloves garlic, minced
 - 1 lemon, juiced and zested
 - 1 teaspoon fresh parsley, chopped (optional for garnish)
 
Instructions
- Preheat the oven to 400°F.
 - Cut two large pieces of aluminum foil, about 12 inches long. Place one salmon fillet in the center of each piece of foil.
 - Arrange the trimmed asparagus around the salmon fillets. Drizzle the olive oil over the salmon and asparagus, then sprinkle with salt and black pepper.
 - In a small bowl, mix together the melted butter, minced garlic, lemon juice, and lemon zest. Pour the lemon garlic butter sauce evenly over the salmon and asparagus.
 - Fold the sides of the foil over the salmon and asparagus to create a sealed packet. Make sure it is tightly sealed to prevent any steam from escaping.
 - Place the foil packets on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
 - Carefully open the foil packets (watch out for steam) and garnish with fresh parsley if desired. Serve immediately.
 
Notes
- For a spicier kick, add a pinch of red pepper flakes to the lemon garlic butter sauce.
 - You can also substitute the asparagus with green beans or broccoli for a different flavor and texture.
