Ingredients

  • 2 pounds bone-in, skin-on chicken thighs
  • 1 cup plain Greek yogurt
  • 3 tablespoons za’atar spice blend
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the Greek yogurt, za’atar, olive oil, minced garlic, lemon juice, salt, and black pepper. Mix until well combined.
  3. Add the chicken thighs to the bowl, ensuring they are fully coated with the yogurt mixture. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.
  4. Place the marinated chicken thighs on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy. The internal temperature should reach 165°F (74°C).
  6. Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh parsley if desired.
