Ingredients
- 2 pounds bone-in, skin-on chicken thighs
- 1 cup plain Greek yogurt
- 3 tablespoons za’atar spice blend
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the Greek yogurt, za’atar, olive oil, minced garlic, lemon juice, salt, and black pepper. Mix until well combined.
- Add the chicken thighs to the bowl, ensuring they are fully coated with the yogurt mixture. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.
- Place the marinated chicken thighs on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy. The internal temperature should reach 165°F (74°C).
- Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh parsley if desired.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the marinade.
