Ingredients
For the Burrito Seasoning:
- 1 tsp onion powder
- 1 tsp dried oregano
- 1 tsp salt
- 2 tsp cumin powder
- 2 tsp paprika
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper (optional)
For the Beef Filling:
- 1/2 tbsp olive oil
- 2 garlic cloves, minced
- 1/2 onion, finely chopped
- 500g (1 lb) lean ground beef
- 2 tbsp tomato paste
- 3 tbsp water
For the Burritos:
- 6–8 large flour tortillas (25cm/10”+)
- 3 cups cooked rice, warm
- 3 cups iceberg lettuce, finely sliced
- 1 cup canned corn kernels, drained
- 1 cup canned black beans, drained
- 3 tomatoes, deseeded and diced
- 1/2 red onion, finely chopped
- 1 1/2 cups shredded cheese (150g)
- Fresh cilantro, to taste (optional)
Instructions
- Prepare the Seasoning:
- In a small bowl, combine onion powder, oregano, salt, cumin powder, paprika, black pepper, and cayenne pepper. Mix well and set aside.
- Cook the Beef Filling:
- Heat olive oil in a skillet over medium-high heat. Add garlic and onion, cooking until fragrant and lightly browned, about 2 minutes.
- Add ground beef, breaking it up with a spatula as it cooks. Stir until browned.
- Sprinkle the prepared seasoning over the beef and mix well.
- Stir in tomato paste and water. Simmer for 3 minutes until the mixture is juicy and flavorful. Set aside to cool slightly.
- Warm the Tortillas:
- If not heating the burritos after assembly, warm each tortilla in a dry skillet over medium heat for 30 seconds on each side or follow package instructions.
- Assemble the Burritos:
- Lay a tortilla flat on a clean surface. Spread 1/4–1/3 cup of rice just below the center of the tortilla.
- Add 1/4–1/3 cup of beef filling, followed by lettuce, corn, black beans, tomatoes, and red onion.
- Sprinkle with shredded cheese and fresh cilantro, if desired.
- Fold the bottom of the tortilla up to cover the filling. Fold the sides inward and roll tightly to secure.
- Optional Heating:
- Pan-Fry: Place the burrito in a dry skillet over medium heat. Cook for 2–3 minutes per side until the tortilla is golden and crisp.
- Bake: Wrap burritos in foil and bake at 180°C (350°F) for 20 minutes (or 30 minutes if reheating from the fridge).
- Serve:
- Serve warm with sour cream, guacamole, or salsa on the side. A squeeze of lime adds a refreshing finish!
Notes
- Let the beef filling cool slightly before assembling to prevent soggy tortillas.
- Use large, soft flour tortillas to hold all the fillings securely.
- These burritos can be prepped ahead and stored in the fridge for 3 days or frozen for up to 3 months.
