Description

Beef burritos are a flavor-packed classic that combines tender seasoned beef, fluffy rice, and crisp veggies, all wrapped in a soft tortilla. Perfect for busy weeknights, meal prep, or casual gatherings, these burritos are customizable, freezer-friendly, and absolutely irresistible!


Ingredients

For the Burrito Seasoning:

  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp salt
  • 2 tsp cumin powder
  • 2 tsp paprika
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)

For the Beef Filling:

  • 1/2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1/2 onion, finely chopped
  • 500g (1 lb) lean ground beef
  • 2 tbsp tomato paste
  • 3 tbsp water

For the Burritos:

  • 68 large flour tortillas (25cm/10”+)
  • 3 cups cooked rice, warm
  • 3 cups iceberg lettuce, finely sliced
  • 1 cup canned corn kernels, drained
  • 1 cup canned black beans, drained
  • 3 tomatoes, deseeded and diced
  • 1/2 red onion, finely chopped
  • 1 1/2 cups shredded cheese (150g)
  • Fresh cilantro, to taste (optional)

Instructions

  1. Prepare the Seasoning:
    • In a small bowl, combine onion powder, oregano, salt, cumin powder, paprika, black pepper, and cayenne pepper. Mix well and set aside.
  2. Cook the Beef Filling:
    • Heat olive oil in a skillet over medium-high heat. Add garlic and onion, cooking until fragrant and lightly browned, about 2 minutes.
    • Add ground beef, breaking it up with a spatula as it cooks. Stir until browned.
    • Sprinkle the prepared seasoning over the beef and mix well.
    • Stir in tomato paste and water. Simmer for 3 minutes until the mixture is juicy and flavorful. Set aside to cool slightly.
  3. Warm the Tortillas:
    • If not heating the burritos after assembly, warm each tortilla in a dry skillet over medium heat for 30 seconds on each side or follow package instructions.
  4. Assemble the Burritos:
    • Lay a tortilla flat on a clean surface. Spread 1/4–1/3 cup of rice just below the center of the tortilla.
    • Add 1/4–1/3 cup of beef filling, followed by lettuce, corn, black beans, tomatoes, and red onion.
    • Sprinkle with shredded cheese and fresh cilantro, if desired.
    • Fold the bottom of the tortilla up to cover the filling. Fold the sides inward and roll tightly to secure.
  5. Optional Heating:
    • Pan-Fry: Place the burrito in a dry skillet over medium heat. Cook for 2–3 minutes per side until the tortilla is golden and crisp.
    • Bake: Wrap burritos in foil and bake at 180°C (350°F) for 20 minutes (or 30 minutes if reheating from the fridge).
  6. Serve:
    • Serve warm with sour cream, guacamole, or salsa on the side. A squeeze of lime adds a refreshing finish!

Notes

  • Let the beef filling cool slightly before assembling to prevent soggy tortillas.
  • Use large, soft flour tortillas to hold all the fillings securely.
  • These burritos can be prepped ahead and stored in the fridge for 3 days or frozen for up to 3 months.
