Birria Pizza Quesadilla is a delicious fusion dish that combines the rich flavors of birria with the cheesy goodness of a quesadilla, topped with fresh ingredients.


Ingredients

  • 2 cups cooked birria meat, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 cup Oaxaca cheese, shredded
  • 1/2 cup pizza sauce
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 1 avocado, sliced (optional)
  • Lime wedges (for serving)


Instructions

  1. In a large skillet over medium heat, add olive oil. Once hot, add the shredded birria meat and taco seasoning, stirring to combine. Cook for about 3-4 minutes until heated through. Remove from heat.
  2. Lay one tortilla flat on a clean surface. Spread 1/4 cup of pizza sauce evenly over the tortilla.
  3. On one half of the tortilla, layer 1/2 cup of mozzarella cheese, 1/2 cup of Oaxaca cheese, and 1/2 cup of the cooked birria meat. Top with a sprinkle of diced onions, tomatoes, and cilantro.
  4. Fold the tortilla in half to create a quesadilla.
  5. In the same skillet, cook the quesadilla over medium heat for 3-4 minutes on each side, or until the cheese is melted and the tortilla is golden brown.
  6. Remove from the skillet and let it cool for a minute before slicing into wedges. Serve with avocado slices and lime wedges on the side.

  • For a spicier kick, add sliced jalapeños inside the quesadilla before folding.
